GRILLED CHEESE & POTATO SANDWICH

Servings: 4
WHAT YOU’LL NEED (For A Loaded Sandwich)

2 Russet Potatoes (Cleaned in water and sprayed with cooking spray or spread with Olive Oil)
-
8 slices of Turkey or Pork bacon (Optional. Use a tbsp of vegetable oil (for pork bacon) and a dash of water in skillet when frying (use both for Turkey Bacon)

8 Slices of Honey Wheat Bread or Sourdough
-
6-8 tbsp butter spread
-
4 Slices of Provolone Cheese
-
4 Slices of Colby Jack
-
1 Sliced and Seeded Tomato
-
1 Cup Spring Mix
-
1/4 Cup Chopped Onions
-
Salt and Pepper to taste

Preheat Oven to 400 Degrees

Roast Entire Potato For An Hour (Shortcut below)
-
Add a tbsp of oil and a dash of water to skillet to fry bacon slice (optional). Set aside
-
Spread butter on both sides of bread slices (Set aside)
-
When the potatoes are two minutes from completion, heat a 12-inch skillet on medium heat (About two sandwiches can fit in there)

Place 4 slices of bread in skillet. Flip slices once their golden.

Add cheeses to both slices on both sets of bread.

Add Potatoes, Bacon, Spring Mix, Tomato Slices
-
Add Salt and Pepper to taste

Tip: Top Sandwich with sour cream!

Butter the remaining slices, place them in the 12-inch skillet and continue to make your sandwiches the same way
Shortcut:
Pan fry the potatoes instead. Cut them into slices, season them and use two tbsp of butter and 2 tbsp of olive oil. Takes about 10 minutes to fry - flip them once.
Artery Clogger:
Want to take it up a notch? Fry the bacon first. After setting it aside, cut potatoes into slices, then fry them in the bacon’s grease and add a tbsp of butter. Yeah, I don’t think y’all are ready for that jelly. Literally. In the age of sitting in the house for weeks - you may develop a jelly like substance on your thighs. Go with it. It’s life.
