IN-N-OUT BURGER

WASH THOSE HANDS!
1. Let the beef reach room temperature (about 10-15 minutes), then mix in salt and pepper seasoning
2. Make flat, thin patties and add mustard to the side facing up (when you throw them on the griddle, place mustard side down, when you turn them over -about 3-4 minutes - you'll then spread mustard to the other side), set aside, wash those hands!
3. Add butter or oil to pan, toast buns, set aside when done
4. Spread sauce on one or both sides of the bun (depending on what kind of mood you're in)
5. Take thin patties and add them to the same pan (mustard side down - remember to add mustard to the other side at this point) flipping after about 3 minutes.
6. Add cheese. Take patties and add them to the buns, then layer with lettuce, tomato and onions (carmelize the onions if you want to prior to by grilling them in butter, a little olive oil and dab of brown sugar for about 25 minutes prior to cooking the burger)
7. Enjoy!
